Overview:
The Assistant Kitchen Manager will be responsible for organizing the kitchen’s activities under supervision of the Kitchen Manager. You will be second in command of the back of house and report directly to the Kitchen Manager. The first priority will be keeping a happy team with a positive work environment. Next priority is taking care of guests in house first. You will be responsible for food orders, kitchen and walk-in organization, prep sheets, temp/ sanitization logs, recipes, and that BOH checklists are being utilized daily and are up to date. In addition, you will assist the Kitchen Manager in making sure all back of house employees are staying on task and the overall functionality of the kitchen.
Responsibilities:
- Keep high moral in the kitchen even when things aren't going right
- We don’t want anyone to be afraid to come to you or to the kitchen
- Monitor labor for back of house staff and make staffing decisions to maintain a reasonable labor percentage
- Control and direct the food preparation process from start to finish
- Ensure recipes are being followed
- Use Sheet to shelf order guide
- Use prep by priority list
- Plan orders of equipment or ingredients according to identified shortages
- Use Xtrachef to monitor current food cost
- Must keep it up to date with current invoices
- Do weekly inventory and compare Actual Food Costs vs Expected Food Costs
- Arrange for repairs when necessary for the kitchen
- Be fully in charge of working interviews, managing and training kitchen staff on expectations and procedures
- Oversee the work of subordinates
- Estimate staff’s workload and compensations
- Maintain records of payroll and attendance
- Comply with sanitation regulations and safety standards
- Ensure kitchen is up to county and 3rd party health inspection standards
- Foster a climate of cooperation and respect between co-workers
Qualifications:
- Ability to pass a required background check
- 18+ years old
- Up to date Food Handler Management license
- Proven experience in chef role preferred
- Exceptional proven ability of kitchen management
- Ability in delegating responsibilities and monitoring progress
- Outstanding communication and leadership skills
- Up to date with culinary trends and optimized kitchen processes
- Good understanding of useful computer programs (MS Office, XtraChef, Toasttab)
- Degree in Culinary science or related certificate preferred
